History 

Marinated Pork Ribs is one of our most iconic and traditional dishes, and it has been on our menu for over 80 years.

When Indio Azteca first opened, it served only drinks, not food; however, in the 1940s, several oven-baked pork dishes were added to the menu using the marinade recipe created by Mrs. Esperanza González, the wife of Don Severo González, son of Indio Azteca’s founder, Don Santiago González. Since then, the Adobado Ribs have been and continue to be a favorite among our diners.
