History: Pachucos. This dish is very interesting because its origins can be traced back no more than 50 years to a specific place: Sabinas Hidalgo, Nuevo León. According to the locals, the pachuco—a fried corn empanada filled with ground beef and potatoes—was invented in the late 1960s.
