Dish: Red tacos from Zaragoza originated during the revolutionary era and later reappeared in 1930 on Zaragoza Street in Monterrey, outside the Monterrey Fountain. As such, this dish is over 100 years old; beyond the national anthem and the flag, tacos represent Mexican identity.
These golden red potato tacos, served with a spicy red sauce and pork rinds, are considered one of the most popular traditional dishes in Monterrey.
Ingredients: Corn tortilla, Guajillo chili, Cascabel chili, potatoes seasoned with butter, salt, pepper, colimino, pork rinds, red chili sauce (made with chile de arbol and chile piquín), cabbage, tomato, and charcoal-smoked meats.
