History or background of the same:

Tamales are a Mexican dish made from corn and filled with various ingredients. They date back to pre-Hispanic times in Mexico; it is said that they were traditionally served at large festivals, prepared to give thanks for the fertility of the land, served at social gatherings, and offered as a tribute to the dead. 

After the conquest, this dish gradually evolved and its ingredients were adapted, as European ingredients were incorporated, which today give it the flavor we know today; this is the case with lard and pork, which replaced vegetables such as squash, quelites, and corn on the cob.
